The Center for Population Health (CPH) and Pennsylvania Highlands Community College has joined forces to create a series of simple cooking videos called POP MEALS. In the series, you’ll learn easy recipes that can be made with minimal ingredients and in very little time with CPH’s Local Food Systems Coordinator/Chef Nan McNinney and Penn Highlands student Kat Walker.
In the first POP MEALS cooking video, you will learn how to make an Easy Black Bean and Corn Salsa.
Easy Black Bean and Corn Salsa recipe
Ingredients:
Canned corn
Canned black beans
Canned diced tomatoes (can substitute fresh tomatoes if they are in season)
Lime juice (bottle or fresh lime)
1 small onion (chopped) – optional
1 jalapeño (chopped) – optional
1 bunch of cilantro (chopped) – optional
Salt and pepper (to taste)
Instructions:
1. Open the cans of corn and beans.
2. Drain the cans so there is no water
3. Dump the corn and beans into a large bowl
4. Chop the onion, jalapeño, and cilantro and add to the bowl. These ingredients are optional. If you don’t like one of them, you don’t have to use it.
5. Open the can of diced tomatoes and add to the bowl (do not drain).
6. Add salt and pepper to your taste.
7. Add lime juice
8. Mix ingredients together
(Keep salsa refrigerated)
